{"id":3461,"date":"2017-05-30T19:50:36","date_gmt":"2017-05-30T19:50:36","guid":{"rendered":"http:\/\/cracosociety.net\/blog\/?p=3461"},"modified":"2017-05-30T19:50:36","modified_gmt":"2017-05-30T19:50:36","slug":"strascinati-with-cardoncelli-mushrooms","status":"publish","type":"post","link":"https:\/\/cracosociety.net\/blog\/strascinati-with-cardoncelli-mushrooms\/","title":{"rendered":"Strascinati with Cardoncelli Mushrooms"},"content":{"rendered":"<p>Strascinati with Cardoncelli Mushrooms<\/p>\n<p>(Sausage and ricotta salata)<\/p>\n<p><i>Ingredients\u00a0<\/i><\/p>\n<p>200 g hard ricotta cheese<\/p>\n<p>150 g extra virgin olive oil<\/p>\n<p>480 g hard wheat flour<\/p>\n<p>420 g cardoncelli mushrooms<\/p>\n<p>300 g fresh pork sausage<\/p>\n<p>900 g fresh tomato sauce<\/p>\n<p>100 g onion<\/p>\n<p>1 garlic clove<\/p>\n<p>5 g dried wild fennel seed<\/p>\n<p><i>Preparation\u00a0<\/i><\/p>\n<p>Make the pasta with the flour and slightly warm water. Roll cylindrical pieces about 3 cm. length and 1 cm. diameter and &#8220;drag&#8221; them fingers down on a wooden board. Strascinati pasta will thus be obtained, with one side smooth and the other wrinkled. Prepare the tomato sauce and clean the cardoncelli<\/p>\n<p>mushrooms. Remove the sausage from its skin. Without browning, gently fry the grated onion and crushed garlic in extra-virgin olive oil using a terracotta casserole. Then add the sausage and mushrooms and simmer for a few minutes with the lid on the casserole. After stirring the ingredients add the tomato<\/p>\n<p>sauce with a few cherry tomato halves and cook for about 20 minutes. At the time boil the strascinati pasta in salted water and drain al dente.
